Every year my family has a holiday tradition where we have a Christmas Dinner. This is a special dinner. My mom and dad (mostly mom) fix a prime rib with all the trimmings. This year we had it on Sunday the 28th. It takes a lot of time so we don't do it on Christmas day. Yum! We use our fancy Christmas china.
For a lot of years every Christmas Mom & Dad gave us kids one item like plates, or bowls, or something like that of Nikko Christmas time China. Over the years now each of us have about an 8 piece setting complete with salad bowls and 13 X 9 pan, platter, and salt & pepper shakers among other things.
So we get to use the nice china, we try to keep the kids calm (easier now they are getting older) through the entire meal.
First we start off with a french cream of mushroom soup and crutsy french bread. Even if you don't like fungus like the kids, they eat this soup. Its a buttery-licious delight. Next we have Quich Lorrainne, the kids will eat it if we call it egg-pie, they love it. Next comes salad and rolls. Then the main course, Prime Rib served with freshly grated horseradish (from Tammy's garden), red potatoes, and string beans with almonds and bacon. YUM!!! It is so good. We all look forward to it every year. It is so much work though, Thanks Mom & Dad!
This year I was in charge of dessert. I made this:
It was yummy, but really rich. It is crushed vanilla wafers layered with mixed berries, white chocolate pudding/cool whip mixture and topped with ganache--melted chocolate chips, coolwhip, and raspberry jam. Wow! Light and fluffy--but super rich.
It is always a great day.
